Friday ammendment; a bonus recipe!

Hello!

So, it's friday. You've just got in from work, so this calls for food that's quick, easy and fun. Much better than any takeaway, my burgers will be a nice and, surprisingly, healthy way to kick off the weekend.

Serves 4

Burger:

500g pack of mince, try for lean steak mince, not too fatty.
4 seeded wholemeal buns
cayenne pepper
salt
pepper
tarragon (yup. Tarragon again)
1 tbsp oil for frying

salad:
romain heart/ baby gem lettuc. NOT iceberg
1 onion white/red doesn't matter
gherkin
mayo (okay, so MOSTLY healthy)
ketchup
bacon (okay, less healthy)
cheese (I give up, it's just a burger)

Prep:

Easy to do, get your mince out of the pack and chop on a board into tiny 0.5-1cm lengths. Supermarket mince usually comes in uniform long spaghetti-like strings so nice and easy. Put into a mixing bowl, make a well in the middle and add the spices and herbs. Salt the meat generously and mix well. Now leave to rest and let the flavours get to know each other for 30 mins. Then shape the mix into 4 big burgers. Get an equal thickness so they cook at the same time.

Get a griddle pan and let it get hot, the pan should be smoking before you put the meat in. Oil the burgers on both sides and stick in the pan. Leave for 4-5 minutes on the first side so they form a thick crispy crust. Only after this should you even touch them, or they will crumble. A further 3-4 minutes on the other side will produce a nice pink burger. Obviously cook to your liking on the second side to cook them through. Get those burgers on a plate and into an oven to rest. Yes, even burgers need a bit of time to relax.
Get the buns, inside down, onto the griddle and leave to brown off a bit. Don't burn them...please. Prep your salad how you like it, raw onion in a burger is great. Good for singles who eat alone, great for people who eat with a partner as you don't have to put effort into your appearance/smells any more.

Assemble and eat. Add grilled bacon-glass and cheese if you want; recommend gorgonzola blue if you're adventurous/have a soul. Cheddar will do if not.
